How to make clarified milk punch with Rico
Milk clarification is one of those things you might hear about or see on menus in fancy cocktail bars – but what does it actually mean?
Long story short, Milk clarification is a technique that allows you to remove impurities and astringent flavor compounds from your cocktails, leaving you with crystal clear and impossibly smooth sippers that are gonna amaze anyone you pour them to. It sounds terrifying, but this is actually one of those cool things that just about anyone can learn to do from home (if they’ve got the patience).

Milk clarification doesn’t just make the drink look prettier, it also removes astringent compounds from the cocktail mixture, giving it a smoother and cleaner taste. We like to demonstrate the technique with a milk punch, but it works for a lot of other cocktails as well. As long as they contain an acidic component and/or alcohol, you should be able to clarify it with milk!
The ratio of milk to cocktail to achieve clarification is usually something around 1:4. However, in the recipe above we use a 1:5 ratio.
Yes and no. The reason we use milk in the first place is because it curdles as a reaction to heat and acid, thereby trapping impurities and astringent flavor compounds. After that, we filter out the curds, and are left with gorgeous crystal clear cocktails that can be bottled and served at a moment’s notice. Some plant-based milk alternatives like coconut milk and soy milk curdle in similar ways, but they require higher heat and longer resting times so they’re normally a fair bit more complicated to use in the clarification process. Other dairy-free milks like almond and oat won’t even curdle up at all, meaning you won’t be able to filter out the stuff you want to. However, if you’re interested in a similar technique that you can perform without using dairy products, you might want to check out “Fat Washing”.

Caviar and Vodka – Arguably one of the most iconic and decadent combos there is. This week on Absolut Drinks with Elyse, we’re gonna show you some of our favorite ways to enjoy this dynamic duo as well as a few simple snack pairings to go along with your luxurious caviar. But before we start slurping, we’ll do a proper vodka tasting and bust a few myths about our favorite spirit. Let’s get into it!
Vodka Myths:
Myth #1: Doesn’t Vodka just taste like water?
This myth actually comes from the way Vodka used to be defined in the US. According to that definition, Vodka is supposed to be a spirit so distilled that it’s completely neutral in taste, aroma and color. In other words, it had to taste, smell and look like water to be defined as Vodka. However, different Vodkas are made using different ingredients, which should and does lend differing characteristics to them. Luckily, this definition was changed in 2020 to better reflect that different Vodka – just like other spirits – might taste, smell and look different from each other.
Myth #2: Is Vodka made from potatoes?
While this may be true for some, Vodka is made using a whole range of different ingredients from wheat, rye, and potatoes. Absolut Vodka is made from Winter Wheat harvested in Åhus, giving it that smooth, almost sweet flavor we’re so proud of.
Myth #3: Can you “Upgrade” bad Vodka by filtering it?
No. Very good vodka comes from distillation. At Absolut, we use a process called “Continuous Distillation” which allows us to kind of pick and choose which flavors and particles we want to keep, ending up with exceptionally smooth Absolut Vodka. Vodka is the most used spirit for cocktails — largely due to its neutral flavor, or a flavor enhancer, as we like to call it. Vodka is usually made from grains like rye, rice, wheat, and vegetables such as corn and potatoes. Nowadays, some distilleries even try using fruits like grapes and apples. Unlike many other liquors, vodka doesn’t have strict rules for how it’s made, so people can get creative with the process.
But hey, we’re sure you already know a thing or two about vodka, but did you know this?
1. Vodka was used as medicine
In the early days of vodka, it was used as medicine and was thought to have magical powers that could heal your wounds and sooth your soul. We don’t know about the soul part, but it has been proven that vodka can sometimes heal wounds, although careful application is required.
2. Vodka actually means water
Yeah, it does, in Russian. It originates from the Russian word “voda,” which translates to water. It is likely that it gained its name from its clear look and seemingly taste-less flavor.
3. Vodka was once used as currency
In the past, vodka served as a form of currency due to its immunity to inflation. It was utilized to purchase goods, services, and even to settle taxes. The government implemented a specific “vodka tax” to contribute to wartime expenses. Presently, in certain regions worldwide, vodka continues to be utilized as currency, and in Russia, it remains a common medium of exchange for goods and services.
4. The percentage of alcohol cannot be less than 37.5-40%
For an alcoholic beverage to be classified as vodka in the United States, it must contain no less than 40 percent alcohol by volume (ABV). In the European Union, however, the restriction is slightly less, and must be at least 37.5 percent by volume. Our own Absolut vodka contains 40% and Absolut Elyx contains 42.3%.
5. Vodka is usually distilled multiple times
Why might you ask? Distillation is how vodka gets pure as the process removes impurities from the vodka, leaving you with a clean spirit. Each time it’s distilled, the alcohol content and purity go up a bit. Vodkas are usually distilled three or four times, but some can go as high as ten times. At Absolut, we’re even proud to say that we distill our vodka continuously, and our distillation is CO2-neutral.
