National Prosecco Day falls on 13 August every year and is a celebration of one of the world’s most popular sparkling wines – an Italian sparkling wine made from Glera grapes, known for its effervescent, fruity and floral character.
So, if you have a bottle at hand, making a Rhubarb Spritz is exactly what you should do with it.
Why the Rhubarb Spritz is the Perfect National Prosecco Day Cocktail
The Rhubarb Spritz is a vodka twist on the classic spritz format using Absolut Vodka, rhubarb syrup, fresh lemon juice, Prosecco and soda water.
It’s tart and sweet, with rhubarb leading the way and the floral sweetness of Prosecco balancing the citrus edge of the lemon juice.
“Rhubarb is one of my favorite flavors in the summer,” shares Ricardo ‘Rico’ Dynan, Bartender and Absolut Global Brand Ambassador. You’re not alone on that one, Rico.
How to Make a Rhubarb Spritz at Home
The Rhubarb Spritz is built directly in the glass – no shaking, no blending – just pour, stir and serve. Here’s what’s in a Rhubarb Spritz:
- 2 parts Absolut Vodka
- 1 part Rhubarb Syrup
- ¾ part Lemon Juice
- Prosecco to top
- Soda Water to top
- Ice Cubes
- 1 sprig Mint
- 1 half Strawberry
Add the Absolut Vodka, rhubarb syrup and lemon juice to a wine glass and stir. Fill with ice, top with Prosecco and soda water, stir once more and garnish.

Perfecting the Rhubarb Spritz
- Make your own rhubarb syrup
Store-bought rhubarb syrup works, but homemade is better and it’s as simple as making simple syrup.
Trim and chop rhubarb stalks, simmer with sugar and water for 15 minutes, strain and chill. The difference in flavor is immediate.
- Use fresh lemon juice
The acidity of fresh lemon juice is what keeps the Rhubarb Spritz from becoming overly sweet. Bottled juice won’t give you the same result – grab a lemon and a citrus press and squeeze it fresh, every time. - Add Prosecco and soda water last
Always add the Prosecco and soda water last and pour gently, then stir once, lightly, with a bar spoon.Over-stirring will flatten the bubbles and a flat spritz is nobody’s idea of a good drink.
